1 large container Italian flavored bread crumbs
6 eggs, beaten
2 bags fresh spinach, steamed
2-3 cans mushrooms
2 cans College Inn chicken broth, small
shredded mozzarella
oil (olive or vegetable)
Cut the breasts into cubes and dip in egg, then dip in bread crumbs. Heat in enough oil in pan to deep fry. Make sure oil is very hot. Add a batch of chicken to oil, continue this in batches until all chicken is fried. In a 13" x 9" pan arrange chicken in bottom of pan, topped with mushrooms, cheese and then spinach. Continue layering in this manner until all chicken is used. Pour broth over chicken until it is half up sides of pan. Cover and bake at 350 degrees for 20 minutes.
