Black Magic Cake

2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 eggs
1 cup strong black coffee (or tsp. powdered instant coffee plus 1 cup boiling water)
1 cup buttermilk or sour milk*
1/2 cup vegetable oil
1 tsp. vanilla extract

Heat oven to 350 degrees. Grease and flour 2 round pans or 1 13" x 9" pan. In a large mixer bowl combine sugar, flour, cocoa, baking soda, baking powder and salt. Add eggs, coffee, buttermilk, oil and vanilla. Beat 2 minutes on medium speed (batter will be thin). Pour batter into prepared pan(s). Bake 30 to 35 minutes for round pans, 35 to 40 minutes for rectangular pan or until wooden toothpick inserted in center comes out clean. Cool 10 minutes.

*To sour milk, use 1 tbs. vinegar plus milk to equal 1 cup.
