1/2 cup vegetable or canola oil
3/4 cup sugar
1 tsp. vanilla extract
1/2 tsp. salt
1/2 - 3/4 cup coarsely chopped macadamia nuts
1/2 cup flaked sweetened coconut
1 1/2 cups flour
1 1/2 tsp. baking powder
Whisk together the egg, egg white and oil. Add the sugar, vanilla, salt, nuts and coconut. Mix well. Set aside. Sift the flour with baking powder, then add gradually to the wet mixture and mix until well blended. Cover and chill overnight.
Preheat the oven to 325 degrees and coat 2 cookie sheets with vegetable spray. Divide dough into 2 parts and roll each into a log long enough to fit lengthwise on a cookie sheet. (The dough is stick; you may want to coat your hands with vegetable oil to do this.)
Place 1 roll on each baking sheet and bake until lightly browned, 25 to 30 minutes. Remove from oven (logs will have flattened out) and cut each log at a diagonal into half inch thick strips. Arrange each strip on its side on the baking sheets and bake until lightly browned, 15 to 20 minutes.
